The internal monitor on my DELL Latitude is 1600x1200 and the external monitor supports only 1280x1024. When I switch on "Twin View" then I only get offered a single resolution for both desktops which is sub-optimal for both monitors! In my case 2800x1050.
How can I configure different resolutions for each monitor? Will UltraMon help me to do this?

UltraMon can't help with this, the problem is a limitation of the Nvidia Win2000 driver (see the FAQ for details).
The problem has been fixed on Windows XP (using the Detonator XP drivers), see this thread.
