Emule has four buttons, not three: Max, rest, min and min to sys tray. The later is overlaid with ultramon's switch monitors button.

As a workaround, go to UltraMon Options > Window Menu and add the application's executable to the list of excluded applications.
The next release might have a fix for this, I haven't tested with eMule yet though.
