I know nothing of scripting language so I wouldn't know where to start in writing a script but I was wondering if this was possible:
I have my HDTV hooked up to my computer and use that TV whenever I am on Media Center. I currently have it on multi-desktop (2 desktops, the 2nd one pretty much dedicated to media center). I was wondering if it is possible...
To have ultramon enable my second monitor whenever I launch Windows Media Center
And then have Ultramon sense when I close media center and automatically disable that monitor.
My TV senses when it doesn't get a signal and goes into powersave. It would save me a lot of money! I know its a long shot but that would sweet.

You could do this with an UltraMon shortcut, to set this up right-click the UltraMon icon in the system tray and select Shortcuts > New Shortcut from the menu.
On my Vista system the full path/name of the Media Center application is %SystemRoot%\ehome\ehshell.exe, you'll need to enter this in the application field.
On the Display Settings page, you can then configure the desired display settings, and UltraMon will restore the original settings when the application exits.
