I recently installed Google Desktop and afterwards I noticed that quite often the Ultramon taskbar is slow in responding, meaning the switching of applications by clicking on them in the taskbar has a delay of 3-5 seconds. Exiting Google Desktop seemed to solve this issue.

Is anyone else experiencing this? Any way to 'fix' it?

One thing you could try is to increase the process priority for the Smart Taskbar. This option is under UltraMon Options > Smart Taskbar.

So far I haven't seen this myself, but I haven't done in-depth testing with Google Desktop.

I had to reinstall Google Desktop a week ago and as it was working on the one time index the problem reoccured. I've now adjusted the priority as suggested and this does seem to help. I actually forgot I even posted this question at the first install of Google Desktop, I'm pretty sure now that it's related to the one-time index/new install of Google Desktop that causes the slowness of the taskbar.
