Is there any way I can create a keyboard shortcut that when executed will place the focus on monitor1 or monitor2?

UltraMon can't do this, what you could do is move the mouse to the monitor via hotkey, but you would still need to click the mouse to activate the application.
I'll consider support for this for UltraMon 3.
