Is there an easy way (through scripting or simple coding) to have a shortcut to instantly suspend/restore secondary monitor, or just blank it?

UltraMon does not support this directly.
Blanking a monitor could be done with the Screen Saver Player add-on. For example to blank monitor 3, you would run the following command:
scrplayer "c:\windows\system32\scrnsave.scr" 3
You can close the Screen Saver Player with ALT+F4.
I'm not aware of any way to put only a single monitor on standby.
