I want to build a workstation with three monitors. Two of them will be connected to a AGP card and the third in the PCI slot.

I need to have different windows open such as IE, some JAVA applets, Word, Excel, Outlook etc.
Sometimes I probably need to switch one window from one screen to the other and sometimes I need to pull some windows outside or almost outside the screen but I don't want them to appear on the second or third screen.

Is UltraMon suitable for my needs?

I forgot to add that I don't want the open windows to spread to all monitors. I want thm to stay within the limits of one monitor-even when they are maximized.

For quickly moving windows, UltraMon adds a custom window button and enables moving of maximized windows using the mouse. See window management for more information.

Moving windows to the edge of the center monitor without having them appear on the left or right monitor isn't supported. One option would be to minimize them instead.

The operating system handles maximizing windows, and will ensure that they only get maximized to the monitor they're on. This requires that the operating system recognizes each monitor individually (see true multi-monitor support for more information).
