Hello, simple question. Some upgrades can be done over the old software. Do I just upgrade OVER the old version or have to un-install ?
Got the 2.0 beta 5 and want to install beta 6.

You can install over Beta 5, Beta 6 setup will remove Beta 5 automatically.
Please note that Beta 6 setup will not preserve any settings, you will have to reconfigure hotkeys, screen savers, etc.

Thanks for the information. I almost forgot to ask this question as well. Do I have the exit UltraMon before installation or can it be running ?

No, you can leave it running. Setup handles stopping/restarting UltraMon.
