I currently have two monitors set up next to each other, the one on the left being the Secondary and the one on the right being the Primary.
I would like to make it so I can disable the Primary monitor and make the Secondary monitor the new Primary, and be able to do this at will by pressing a hotkey or something.
I don't have much experience with UltraMon, so I don't know how to go about this. Would I need a script or something?

You could do this with a display profile, to set this up right-click the UltraMon icon in the system tray and select Display Profiles from the menu.
Once you have created the display profile, you could then create a hotkey via UltraMon Options > Hotkeys which applies the profile.

Awesome, that's exactly what I wanted. Thanks a ton. :D
One more thing, is there a way to automatically keep icon positions when I switch back and forth rather than having to restore them each time?

Not directly via the display profile, but you could use the ApplyProfileAndRestoreIcons script to apply both the profile and restore icon positions.
