Is there any automatic way to back up Ultramon's settings (Options)? If not, which files/folders (which ones and where) should I copy?

Currently not, but you could do this manually.
For UltraMon 3:
1) run regedit.exe, right-click the key 'HKEY_CURRENT_USER\Software\Realtime Soft\UltraMon\<version> and select Export from the menu to save the key to a .reg file. Do the same for the key 'HKEY_CURRENT_USER\Software\Realtime Soft\UltraMon Components'
2) on Windows Vista, create a copy of the folder 'C:\Users\<username>\AppData\Roaming\Realtime Soft\UltraMon\<version>, on Windows XP/2000 it would be C:\Documents and Settings\<username>\Application Data\Realtime Soft\UltraMon\<version>
