I have a T60 widescreen laptop. Everything on the second monitor is extended past the edge of the screen. Following is the system info 2 monitors Current desktop: 2960x1050 (0,0 - 2960,1050)
Monitor 1 - ThinkPad Display 1680x1050 (primary): Settings: 1680x1050, 32-bit color, 60 Hz refresh rate Coordinates: 0,0 - 1680,1050. Workspace: 0,0 - 1680,1050 Video card: ATI Mobility Radeon X1400 Device: \\.\DISPLAY1\Monitor0
Monitor 2 - Plug and Play Monitor (removable): Settings: 1280x1024, 32-bit color, 75 Hz refresh rate Coordinates: 1680,0 - 2960,1024. Workspace: 1680,0 - 2960,1024 Video card: ATI Mobility Radeon X1400 Device: \\.\DISPLAY2\Monitor2
How do I make UltraMon use the resolution of the second monitor and not the widescreen resolution when displaying items on monitor 2

Does this happen when you're using mirroring to show the same thing on both monitors?

No, I am using the second monitor as an extended desktop. I am using the same wallpaper for both monitors.

To fix the wallpaper issue, configure the wallpaper via UltraMon (UltraMon menu > Wallpaper), and select either the Stretch or Stretch proportional option for the image on the secondary monitor.
