I've added the 'Move Window' command and the 'Maximize to Desktop' command to my windows control menu but they do not have an underscored letter for a hotkey. I can use the keystroke sequence Alt-Space, n to minimize a window. Is there any way to make these Ultramon menu items do something similar? I'd like to do Alt-Space, d to Maximize/Restore to desktop and Alt-Space, o to move to other monitor.

Currently that's not supported, but I'll look into this for UltraMon 3.
One thing you could do is configure hotkeys to move and desktop-maximize windows, you can do this under UltraMon Options > Hotkeys.
