When I rightclick the taskbar on monitor 2 and click show tasks from monitor 1, the tasks on monitor one disappear and only show on monitor 2's taskbar.
How can I get tasks from monitor 1 to show on my normal taskbar and on monitor 2?

That's not supported, but what you could do is show all tasks on all taskbars, to enable this go to UltraMon Options > Smart Taskbar and select mirror mode.
