Have just installed ultramon but it's only detecting one monitor. How do I tell it there are two monitors and change display settings to 'independent' mode?

Usually this happens if the video card is set to span mode. You can change the multi-monitor mode via the software for the video card, which can usually be accessed through a tab under advanced display properties.
For example with an Nvidia video card you would need to use Dualview mode instead of span mode.
