We've been running the trial version of Ultramon on a Vista machine and it's been working ok. Today the trial period expired and guess what? Ultramon disabled the second monitor completely! Not only that, the resolution on the first monitor now looks like crap! What's up with that?

That's most likely not related to UltraMon, UltraMon won't change display settings if the trial period has expired.
You can enable the secondary monitor and change display settings via Control Panel > Personalization > Display Settings.
