Do you have set-by-step instructions for mirroring two monitors?
I have monitor #1 set at 1920x1200 and monitor #2 1680x1050
When I ran the mirroring it would make both monitors at 1680x1050 apparently I am not doing things right.

By default, mirroring will set both monitors to the same resolution, this will give you the best performance.
You can change the default resolution setting for each monitor under mirror settings (UltraMon menu > Mirroring > Settings).
The included help has information on some features, but not on mirroring. You can access it via UltraMon menu > Help.
