Being able to do Virtual Desktops with Ultramon would be great, as it would mean one less utility I have to have installed and managing my monitor. Ideally, support for 4 virtual desktops would be great, along with the ability to use hotkeys to switch between them and send Applications to another desktop, and the ability to "pin" an application to all the desktops (using a button on the title bar). Take a look at the Microsoft Virtual Desktop Manager for ideas. My biggest grip with it is I cant move applications between desktops without using the Shared Desktops Mode.
