How can I prevent a maximized window from maximizing to full screen (and therefore displaying over the taskbar)?
I've checked "take taskbars into account when maximizing to the desktop", to no avail.

Make sure all UltraMon taskbars are set to be always on top.
To do this, right-click a free area on the UltraMon taskbar and ensure that 'Always on Top' is checked.

My question is, if I click always on top it then makes my taskbar disapear when nothing is open. Is there a way to always show the taskbar? Always show it at all times on my second monitor? This is really buggin me.

Make sure you don't have the Auto-Hide option enabled, this would cause the taskbar to hide itself whenever it doesn't have the focus.
