I cannot change any of the settings under Wallpaper, the Ultramon Dekstop settings are greyed out.

Do you have the Default wallpaper selected? If (None) is selected, all the controls will be disabled.
If you have this problem with the Default wallpaper, it would mean that you don't have write access to the wallpaper file (would be strange though).
You can also create a new wallpaper by clicking on the 'New wallpaper' button. Let me know if you have the same problem with the new wallpaper.

Windows Xp moved My Documents so the folder that the Wallpaper looks at didnt exist. I created the folder and moved the default back and its working now.

I have the same problem and had deduced it was because I moved My Documents to a network drive. I don't want to move it back; is there any way to have Ultramon store the wallpapers in another folder?

To change the location of the wallpaper folder, run regedit.exe, go to the key 'HKEY_CURRENT_USER\Software\Realtime Soft\UltraMon\Wallpaper', then set the 'Wallpaper Directory' value to the new path of the wallpaper folder.
The location of the shared wallpaper folder is stored under 'HKEY_LOCAL_MACHINE\SOFTWARE\Realtime Soft\UltraMon\Wallpaper'.
